Les deux remplissent la m\u00eame fonction bien qu&#039;ils fonctionnent de mani\u00e8res tr\u00e8s diff\u00e9rentes, c&#039;est pourquoi nous devons conna\u00eetre les \u00e9quivalences qu&#039;ils ont lorsqu&#039;ils nous demandent une vari\u00e9t\u00e9 et que nous ne l&#039;avons pas.<\/p>\n<h2>Quelle est la diff\u00e9rence?<\/h2>\n<p>La <strong>levure s\u00e8che<\/strong> La boulangerie est celle qui se pr\u00e9sente g\u00e9n\u00e9ralement sous forme de granul\u00e9s dans un sachet et sa dur\u00e9e de conservation est beaucoup plus longue, car elle ne n\u00e9cessite pas de conditions de conservation particuli\u00e8res.&nbsp;<\/p>\n<p>La <strong>levure fra\u00eeche<\/strong> La boulangerie est g\u00e9n\u00e9ralement emball\u00e9e en portions beaucoup plus petites ou est g\u00e9n\u00e9ralement vendue en vrac dans les boulangeries. Sa dur\u00e9e de conservation est courte, car elle doit toujours \u00eatre conserv\u00e9e au r\u00e9frig\u00e9rateur.<\/p>\n<p>Il ne faut pas les confondre avec ce qu&#039;on appelle normalement <strong>levure chimique<\/strong> soit <strong>levure chimique<\/strong>, puisque les levures sont des organismes vivants qui ne r\u00e9agissent pas avec la chaleur pendant la cuisson comme le font les levures chimiques. De plus, au-dessus de 45 degr\u00e9s, ils meurent et la fermentation ne se produit plus.<\/p>\n<p><img decoding=\"async\" alt=\"La levure fra\u00eeche est g\u00e9n\u00e9ralement plus puissante que la levure s\u00e8che.\" src=\"\/media\/upload\/2020\/06\/09\/bread-2559313_1920.jpg\" style=\"width:100%\"><\/p>\n<h3>Quelle est la relation entre eux ?<\/h3>\n<p>Cette relation est tr\u00e8s simple, il faudrait simplement utiliser de la levure s\u00e8che environ un tiers de la quantit\u00e9 de levure fra\u00eeche, par exemple, s&#039;ils nous le demandent <strong>5 <a href=\"https:\/\/amzn.to\/2UAowuR\">grammes <\/a>levure s\u00e8che<\/strong>, il va falloir mettre dans le mix <strong>15 <a href=\"https:\/\/amzn.to\/2UAowuR\">grammes <\/a>levure fra\u00eeche<\/strong>.&nbsp;<\/p>\n<p>Dans la plupart des produits que nous allons cuire, l&#039;id\u00e9al est d&#039;utiliser environ 2% de levure fra\u00eeche dans nos p\u00e2tes.
