In this article you will find several types of recipes on vegetarian cuisine, we will go from soups, to pasta and also some uses of the textured soybeans. Some are quicker than others, but most are easy, affordable recipes that can be prepared in less than half an hour. 

These recipes will help you especially if you are starting to have a vegetarian diet and you don't know very well what to eat, since at first it takes a little getting used to and getting out of the meat, the transition will be very easy and you will not miss any flavor or texture since you will have it with options such as seitan and the soy.

Soups

As a first course, a soup is always welcome, since they are a light option and can be made in two totally different ways, such as hot soups and the cold soups. On this occasion we will leave you with a hot and a cold one so that you always have both options in mind.

Cold beet cream (2 or 3 servings)

We are going to need:

  • 1/2 cooked beet
  • 2 onions
  • 2 cloves of garlic, minced
  • 5 Carrots
  • 3 Tablespoons of apple juice
  • 1/2 teaspoon dried oregano
  • 2 teaspoons sea salt
  • 2 Tablespoons of apple cider vinegar
  • 2 Tablespoons of olive oil

Step 1

Let's fry the onions and the garlic with oil and a pinch of salt for 10 minutes. We will add the carrots, the pepper, two cups of water and the oregano. We will cover and cook for 20 minutes.

Step 2

We will finally add the beet and we will puree it. We will also add the vinegar and the Apple juice that will give us that touch of acidity. 

Step 3

We let it cool and plate it. Once this is done we can add the garnish that we like the most, such as fried bread or toasted, a cucumber cut into cubes or fresh basil

Beets are one of the healthiest foods, it is advisable to have at least something with beets once a week.

Vegetable soup with broad beans (2 servings)

For this recipe we will need:

  • 1 strip of celery
  • 2 Potatoes cut into cubes
  • 2 Carrots
  • 1 onion
  • 1 Cup of fresh beans
  • 1/2 Cup of corn
  • 1 teaspoon olive oil
  • 1 teaspoon of sea salt
  • white miso

Step 1

Let's fry the onions with the olive oil and salt for about 12 minutes, stirring constantly so as not to burn it. 

Step 2

We will add the rest of the ingredients and pour in cold water until it covers the entire vegetable. We will cover and cook over low heat for half an hour. 

Step 3

If the consistency is not to our liking we can always add more water until it is the way we like it. To finish we will season to taste with a little white miso.

White miso is usually used in soups that come from the East.

Pasta

Many think that people who follow a vegetarian diet You don't have many options when it comes to eating pasta, since most use ingredients that have an animal origin, such as mince or the bacon. Luckily, the seitan and the textured soybeans They replace it with a unique and exquisite flavor. 

Macaroni with seitan (3 servings)

For this recipe we will need:

  • 1/2 package of whole wheat macaroni
  • 1/2 package of seitan cut into cubes
  • Finely chopped fresh parsley
  • 1 Tablespoon of olive oil
  • 1/2 Tablespoon sea salt
  • Tomato sauce to taste

Step 1

Boil the macaroni with plenty of water and a pinch of salt, you can add a little olive oil so that the pasta. If you want to check if the pasta is already cooked properly, you can take a macaroon and cut it, if the color of the inside is the same as the outside, they are ready. Once ready we proceed to drain them.

Step 2

We fry the seitan with a pinch of olive oil until its consistency is crunchier and less gelatinous. Once fried, we leave it on kitchen paper to absorb the oil.

Step 3

We mix the seitan with the ketchup and the macaroni. We can decorate with a little parsley and if we want to add a little extra flavor we can add a little oregano and cheese either vegan cheese in case it is.

Seitan is a great substitute for minced meat or schnitzel in many cases.

Spaghetti with bolognese (textured soy)

For this recipe we will need:

  • 1/2 package of spaghetti
  • 1 Carrot
  • 1/2 Onion
  • 3 fresh tomatoes
  • 1 Cup of mushrooms
  • 1 Tablespoon of olive oil
  • 1/2 Tablespoon sea salt
  • 1 tablespoon smoked paprika
  • 1 splash of soy sauce
  • Oregano
  • 1 glass of fine textured soy 

Step 1

Boil the pasta a little bit of salt and oil so that it does not stick, if you want you can add one vegetable pill to give it more flavor. Once it is boiled we drain it.

Step 2

Let's crush the 4 fresh tomatoes to make the sauce. We cut all the vegetable dice and fry it with olive oil until it is completely golden, stirring constantly so it doesn't burn. Add the textured soybeans and mix until the soybeans also brown. Add soy sauce and a glass and a half of water.

Step 3

When the soy has absorbed all the water, add the ketchup next to paprika smoky red and the oregano. Let it boil until the sauce is thicker. 

Step 4

We plate the pasta and we cast the bolognese on top, if you want you can add a little grated cheese or to gratin
